Loving November!

I am so loving this weather especially this last weekend, I got to enjoy my two favorite seasons in a matter of 3 days. Halloween night my Mountain Man and I had a nice quite night at home and enjoyed watching some fun Halloween movies. Then Saturday we woke up to SNOW!!!!! I love snow and could live in it all year.

I was like a kid in a candy store waking up to this, snow makes me ready to decorate for Christmas! However sadly my mountain man has prohibited me from any decorating till after Thanksgiving, know that the minute dinner is cleaned up on the 27th decorating will start! Unfortunately by mid-afternoon the snow was gone and the temps were in the 40's.
Sunday was a very nice day, it was in the upper 40's - low 50's. We had fun going to town and doing some grocery shopping and a little boot shopping, love boots and just had to have a new pair for winter in this new place. We also had to make a stop to one of our favorite look outs up on East River Mountain. This place is so gorgeous and has the best view no matter the time of the year. You look down onto the town of Bluefield, VA &WV from an elevation of 3,500ft. After the lookout we headed down the other side of the mountain and made a little trip through the East River tunnel!

It is a 5,412 ft tunnel going under East River Mountain, it takes a little over a minute to go through the tunnel. The state line between West Virginia and Virginia is almost right in the middle of the tunnel, 51 % is in West Virginia and 49% is in Virginia.
We also had to make our weekly stop at the watering hole, this is where we get the water that we drink. We have a well at home but nothing compares to fresh mountain water. We use our water to cook with and wash with and drink the mountain water. Normally it is running faster but this day was slow one.

 Sunday & Monday were absolutely gorgeous days, the sun was shining, a breeze was blowing, and it was in the 60's. We stayed outside most of the day both days. Monday night we had a fire and cooked burger and corn, we also had homemade loaded baked potato salad and homemade apple pie. Yummy


Loaded Baked Potato Salad
Ingredients 
  • 8 potatoes, cubed ( half peeled or half with skin)
  • 2 teaspoons salt
  • 6 slices bacon, diced & crisp cooked
  • 6 green onions
  • 2 cups cheddar cheese, shredded
  • 16 ounces sour cream
  • 1/4 teaspoon pepper
  • 1 cup Miracle Whip or 1 cup mayonnaise
Directions
Cut and boil the potatoes or you can microwave them in 3 min increments until tender with a fork. Drain if boiled. Crumble bacon and slice onion. Combine sour cream, pepper, and mayo. Add potatoes, stir. Add bacon, onions, and cheese(reserve some for top). Mix everything together un till just combined. pour into seeing dish and top with reserved bacon, onions and cheese. serve warm or chill. Enjoy!
